Method

Cooking the Pasta

    Prepare the Pasta

    In a large pot, bring salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the pasta and set aside. Do not rinse.

Making the Bolognese Sauce

    Sauté the Vegetables

    In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Cook for about 5-7 minutes until the vegetables are softened.

    Add Garlic

    Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat

    Add the ground beef and ground pork to the pan. Cook until browned, breaking it apart with a spoon, about 8-10 minutes.

    Incorporate Tomato Paste

    Stir in the tomato paste and cook for 2-3 minutes to deepen the flavor.

    Add Tomatoes and Wine

    Pour in the crushed tomatoes and red wine. Bring the mixture to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally. If the sauce gets too thick, add a splash of water.

    Finish the Sauce

    Stir in the milk, oregano, salt, black pepper, and chopped basil. Allow it to simmer for an additional 10 minutes.

Combining Pasta and Sauce

    Combine and Serve

    Add the cooked pappardelle to the Bolognese sauce and toss to coat the pasta evenly. Serve hot, topped with grated Parmesan cheese.
