Preparing the Pasta

    In a large pot of boiling salted water, add the pappardelle pasta. Cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.

    Before draining, reserve about 1 cup of the pasta cooking water. Then, drain the pasta and set aside.

Making the Sauce

    In a large skillet, heat the olive oil over medium heat. Add the finely chopped shallots and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
