    In a large bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, salt, black pepper, cumin, paprika, and cinnamon. Stir well to create a marinade.

    Place the leg of lamb in a large roasting pan. Pour the marinade over the lamb, ensuring it is fully coated. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best flavor.

    Preheat your oven to 325°F (165°C).

    In a separate bowl, toss the carrot chunks, quartered potatoes, and quartered onions with olive oil, salt, and pepper. Arrange them around the lamb in the roasting pan.
