Method

Preparation

  1. 1

    Marinate the Salmon

In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.

  2. 2

    Prepare the Vegetables

While the salmon is marinating, wash and slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and covered with ash.

  2. 4

    Grill the Vegetables

In a large bowl, toss the prepared zucchini, bell peppers, and asparagus with olive oil, salt, and black pepper. Place them on the grill and cook for 5-7 minutes, turning occasionally, until tender and slightly charred.

  3. 5

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Cook for about 4-6 minutes on each side, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Serving

  1. 6

    Plate the Dish

Once the salmon and vegetables are done, plate the grilled salmon alongside the seasonal vegetables. Optionally, drizzle extra lemon juice over the top for added flavor.

  2. 7

    Serve Hot

Serve the grilled salmon immediately while hot, accompanied by your choice of sides or grains.
