Mash the Potatoes
Once cooled, peel the potatoes and mash them in a large bowl until smooth. Let cool completely.

Shape the Gnocchi
Divide the dough into 4 parts. Roll each part into a long rope, about ½ inch thick. Cut into 1-inch pieces. Use a fork to create ridges on each piece, if desired.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, salt, and black pepper. Bring to a simmer and cook for about 15 minutes, stirring occasionally.

Add Fresh Basil
Remove the sauce from heat and stir in the chopped basil. Adjust seasoning to taste.
Cooking the Gnocchi and Serving

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Combine Gnocchi and Sauce
In the saucepan with the tomato-basil sauce, gently fold in the cooked gnocchi until well coated.

Serve and Garnish
Plate the gnocchi with sauce. Top with shredded mozzarella, whole basil leaves, and a drizzle of olive oil before serving.
