Gnocchi

Method

Gnocchi Preparation

  1. 1

    Cook the Potatoes

In a large pot, bring salted water to a boil. Add the potatoes and cook until fork-tender, about 20-25 minutes. Drain and let cool slightly.

  2. 2

    Mash the Potatoes

Once cooled, peel the potatoes and mash them in a large bowl until smooth. Let cool completely.

  3. 3

    Make the Gnocchi Dough

Add the flour, egg, and salt to the mashed potatoes. Stir until a dough forms. Knead gently on a floured surface until just combined, about 1-2 minutes.

  4. 4

    Shape the Gnocchi

Divide the dough into 4 parts. Roll each part into a long rope, about ½ inch thick. Cut into 1-inch pieces. Use a fork to create ridges on each piece, if desired.

Tomato-Basil Sauce Preparation

  1. 5

    Sauté Garlic

In a large saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.

  2. 6

    Add Tomatoes and Seasoning

Stir in the crushed tomatoes, salt, and black pepper. Bring to a simmer and cook for about 15 minutes, stirring occasionally.

  3. 7

    Add Fresh Basil

Remove the sauce from heat and stir in the chopped basil. Adjust seasoning to taste.

Cooking the Gnocchi and Serving

  1. 8

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

  2. 9

    Combine Gnocchi and Sauce

In the saucepan with the tomato-basil sauce, gently fold in the cooked gnocchi until well coated.

  3. 10

    Serve and Garnish

Plate the gnocchi with sauce. Top with shredded mozzarella, whole basil leaves, and a drizzle of olive oil before serving.
