Preparing Polenta Bites

    Cook the Polenta

    In a saucepan, bring 4 cups of water to a boil. Add 1 cup of polenta and 1 tsp of salt. Whisk continuously to prevent lumps. Cook on low heat for about 15-20 minutes until thickened, stirring frequently.

    Add Cheese and Seasoning

    Once the polenta is thick, stir in 1 cup of grated Parmesan cheese, 1 tsp of black pepper, and mix well until smooth. Pour the polenta into a greased baking dish and spread evenly. Allow it to cool and set for at least 30 minutes.

    Cut into Bites

    After the polenta has set, cut it into bite-sized squares or circles for frying.

Preparing Seafood

    Prepare the Batter

    In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of garlic powder. Slowly whisk in 1 cup of cold sparkling water until you have a smooth batter.

    Batter the Seafood

    Dip the shrimp and calamari rings into the batter, ensuring they are evenly coated.

Frying

    Heat Oil

    In a deep pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Seafood

    Carefully drop the battered shrimp and calamari into the hot oil in batches. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Fry the Polenta Bites

    In the same hot oil, fry the polenta bites until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Serving
