Steak

Sautéed Spinach

Grilled Asparagus

Mashed Potatoes

Gorgonzola Sauce

Method

Steak

  1. 1

    Prepare the Steak

Remove the ribeye from the refrigerator and let it come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

  2. 2

    Sear the Steak

Heat olive oil in a cast-iron skillet over high heat until it's almost smoking. Place the steak in the skillet and sear for 4-5 minutes on one side until a crust forms. Flip and cook for another 4-5 minutes for medium-rare, adjusting time for desired doneness.

  3. 3

    Rest the Steak

Remove the steak from the skillet and let it rest for 5-10 minutes before slicing to ensure the juices redistribute.

Sautéed Spinach

  1. 4

    Prepare the Spinach

Rinse the fresh spinach under cold water and set aside.

  2. 5

    Sauté the Garlic

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  3. 6

    Cook the Spinach

Add the spinach to the skillet, season with salt and pepper, and sauté until wilted, about 3-4 minutes. Remove from heat.

Grilled Asparagus

  1. 7

    Prepare the Asparagus

Trim the ends of the asparagus spears and rinse under cold water.

  2. 8

    Grill the Asparagus

In a bowl, toss the asparagus with olive oil, salt, and pepper. Preheat a grill or grill pan over medium-high heat and grill the asparagus for 3-4 minutes, turning occasionally, until tender and slightly charred.

Mashed Potatoes

  1. 9

    Prepare the Potatoes

Peel and cut the potatoes into quarters. Place them in a large pot of salted water and bring to a boil.

  2. 10

    Cook the Potatoes

Cook the potatoes until they are fork-tender, about 15-20 minutes. Drain and return to the pot.

  3. 11

    Mash the Potatoes

Add butter, milk, salt, and pepper to the potatoes. Mash until smooth and creamy.

Gorgonzola Sauce

  1. 12

    Prepare the Sauce

In a small saucepan, combine Gorgonzola cheese and heavy cream. Heat over low heat, stirring constantly until the cheese melts and the sauce is smooth.

  2. 13

    Season the Sauce

Season with salt and pepper to taste. Keep warm until ready to serve.
