Method

Preparation

  1. 1

Preheat your oven to 200°C (390°F). Grease four ramekins with butter and dust them with cocoa powder to prevent sticking.

  2. 2

In a heatproof bowl, melt the dark chocolate and unsalted butter together. You can do this over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring frequently until smooth.

  3. 3

In a separate bowl, whisk together the granulated sugar and large eggs until pale and fluffy.

  4. 4

Add the melted chocolate mixture and vanilla extract to the egg mixture, and fold gently until combined.

  5. 5

Sift in the all-purpose flour and a pinch of salt, then fold gently until just combined. Be careful not to overmix.

Baking

  1. 6

    Pour and Bake

Divide the batter evenly among the prepared ramekins. Place them on a baking tray and bake in the preheated oven for about 10-12 minutes, or until the edges are set but the center is still soft.

Serving

  1. 7

    Serve

Remove the fondants from the oven and let them sit for 1 minute. Carefully run a knife around the edges to loosen them, then invert onto plates. Serve immediately with a scoop of vanilla ice cream on the side.
