Falafel Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water. Allow them to dry on a paper towel.

    Blend the Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but well combined.

    Add Flour

    Transfer the mixture to a bowl and stir in the flour until just combined. If the mixture is too wet, you can add a little more flour.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes. This will help the falafel hold their shape during frying.

    Form the Falafel

    After chilling, use your hands to form small balls or patties from the mixture, about the size of a golf ball.

    Heat the Oil

    In a deep skillet or frying pan, heat the olive oil over medium-high heat until it shimmers.

    Fry the Falafel

    Carefully add the falafel to the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.

    In a small bowl, whisk together the tahini, water, lemon juice, minced garlic, and salt until smooth. Adjust the consistency with more water if necessary.
