Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading
In a mixing bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Prepare the Egg Mixture
In another bowl, whisk together the eggs and buttermilk until well blended.

Breading the Calamari
Dip each calamari ring first into the egg mixture, allowing excess to drip off, then coat it in the flour mixture. Place on a plate and repeat for all rings.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Fry the breaded calamari rings in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
Add minced garlic and sauté for about 1 minute until fragrant but not browned.

Add the Tomatoes
Pour in the canned crushed tomatoes and stir to combine.

Season the Sauce
Add oregano, basil, salt, black pepper, and sugar. Stir well and let simmer for 15-20 minutes, stirring occasionally.

Serve
Once the calamari is fried and the marinara sauce is ready, serve the calamari hot with the marinara sauce on the side.
