Preparing the Bread

Slice the Bread
Preheat your oven to 400°F (200°C). Slice the baguette or Italian bread into 1/2-inch thick slices.

Toast the Bread
Arrange the slices on a baking sheet and brush each side lightly with olive oil. Toast in the oven for about 5-7 minutes or until golden brown.
Preparing the Topping

Chop the Tomatoes
While the bread is toasting, dice the fresh tomatoes and place them in a bowl.

Add Basil and Season
Chop the fresh basil leaves and add them to the bowl with the tomatoes. Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper. Mix gently to combine.

Prepare the Mozzarella
Cut the mozzarella cheese into small cubes or tear it into small pieces.
Assembling the Bruschetta

Top the Toasted Bread
Once the bread is toasted, remove it from the oven and let it cool slightly. Top each slice with the tomato and basil mixture, followed by a few pieces of mozzarella cheese.

Drizzle a little more olive oil on top if desired, and serve immediately while the bread is still warm.
