Ice Cream or Sorbet Base

Method

Preparation and Churning

  1. 1

    Ice Cream Base Preparation

In a medium saucepan, combine heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of sea salt over medium heat. Stir until the sugar is dissolved and the mixture is heated through. Do not bring to a boil. Remove from heat and let it cool to room temperature.

  2. 2

    Chill the Mixture

Once cooled, cover the mixture and refrigerate for at least 4 hours or overnight until it's thoroughly chilled.

  3. 3

    Churn the Ice Cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

  4. 4

    Freeze the Ice Cream

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours until firm.

  5. 5

    Sorbet Preparation (if making sorbet)

If making sorbet, blend fresh fruit and lemon juice in a blender until smooth. Sweeten to taste with sugar if necessary.

  6. 6

    Churn the Sorbet

Pour the fruit mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

  7. 7

    Freeze the Sorbet

Transfer the churned sorbet to an airtight container and freeze for at least 4 hours until firm.
