Prepare the Steak
Remove the bone-in filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.
Season the Steak
Rub the steaks with olive oil, and season generously with kosher salt and freshly ground black pepper on both sides.
Preheat the Skillet
Heat a large cast-iron skillet over medium-high heat until hot.
Sear the Steak
Place the steaks in the skillet and sear for 4-5 minutes on one side until a crust forms. Do not move the steaks during this time.
Check for Doneness
Use a meat thermometer to check for doneness. For medium-rare, aim for an internal temperature of 130°F (54°C).
Rest the Steak
Remove the steaks from the skillet and let them rest for 5-10 minutes before serving. This allows the juices to redistribute.
Serve
Slice the steaks and serve with your choice of sides.
