Tamale Preparation

    Prepare the Corn Husks

    Soak the corn husks in warm water for about 30 minutes until softened. Drain and set aside.

    Make the Dough

    In a large mixing bowl, combine masa harina, baking powder, and salt. In another bowl, beat the vegetable shortening until fluffy, then gradually add in the masa harina mixture and vegetable broth, mixing until you obtain a smooth dough.

    Assemble the Tamales

    Take a soaked corn husk, spread about 2 tablespoons of the dough on the center of the husk, add 2 tablespoons of cooked meat on top, and fold the sides of the husk over the filling. Fold the bottom of the husk up to secure the filling.

    Steam the Tamales

    Place the tamales upright in a steamer pot. Cover and steam for about 1 to 1.5 hours, or until the dough is firm and pulls away from the husk.

    Serve

    Remove from the steamer and let them cool for a few minutes. Serve warm with your favorite chili sauce.
