Prepare the Chiles
Remove the stems and seeds from the dried New Mexico chiles. Place them in a saucepan and cover with water. Bring to a boil and let simmer for 10 minutes until softened. Drain and set aside.

Blend the Marinade
In a blender, combine the softened chiles, minced garlic, ground cumin, oregano, salt, black pepper, and lime juice. Add 1 cup of chicken broth and blend until smooth.

Marinate the Pork
In a large bowl, place the cubed pork shoulder and pour the marinade over it. Mix well to ensure the pork is fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

Cook the Pork
In a large skillet, heat the olive oil over medium-high heat. Add the marinated pork (reserve the marinade) and sear until browned on all sides, about 5-7 minutes.

Simmer
Pour the reserved marinade and the remaining chicken broth over the browned pork. Bring to a boil, then reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the pork is tender.

Once the pork is tender, remove from heat and serve hot. It can be enjoyed on its own or as a filling for tacos or burritos.
