    Prepare the Sopaipilla Dough

    In a large bowl, mix the flour, baking powder, and salt. Gradually add warm water, mixing until a soft dough forms. Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes.

    Prepare the Filling

    In a skillet over medium heat, cook your choice of beef, chicken, or carne adovada until fully cooked. Season to taste and set aside.

    Roll Out the Dough

    On a floured surface, roll out the dough to about 1/4 inch thick. Cut into circles or squares, approximately 4-6 inches in size.

    Fry the Sopaipillas

    Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the dough pieces until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.

    Stuff the Sopaipillas

    Once the sopaipillas are slightly cooled, carefully cut a slit in the side of each to create a pocket. Stuff with the cooked filling (beef, chicken, or carne adovada).

    Serve

    Top the stuffed sopaipillas with sour cream, shredded lettuce, diced tomatoes, and shredded cheddar cheese. Serve with salsa on the side.
