Prepare the Dough
In a large mixing bowl, whisk together the flour, baking powder, and salt. Cut in the shortening or lard until the mixture resembles coarse crumbs. Stir in the warm water gradually until a soft dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead gently for about 2-3 minutes until smooth. Cover the dough with a clean cloth and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball out on a floured surface to about 1/4 inch thick.

Fry the Sopaipillas
Carefully place the rolled dough into the hot oil, a few at a time. Fry until they puff up and turn golden brown, about 2-3 minutes on each side. Remove with a slotted spoon and drain on paper towels.
