Prepare the Coating
In a shallow bowl, combine flour, salt, black pepper, and cayenne pepper. In another bowl, whisk together buttermilk and eggs.

Coat the Steaks
Dredge each beef cube steak in the flour mixture, then dip it into the buttermilk mixture, and finally coat it again in the flour mixture. Set aside.

Fry the Steaks
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the coated steaks and cook for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Add Chile Sauce and Cheese
Place the fried steaks on a serving platter. Pour the green or red chile sauce over the steaks and sprinkle shredded cheese on top. Return to the skillet for a couple of minutes to melt the cheese, if desired.

Serve with Sides
