    Prepare the Filling

    In a mixing bowl, combine the cooked shrimp, crab meat, softened cream cheese, green onions, cilantro, salt, and black pepper. Mix until well combined.

    Assemble the Enchiladas

    Preheat your oven to 350°F (175°C). Take a corn tortilla, spoon some of the seafood filling onto the center, and roll it up tightly. Repeat with the remaining tortillas and filling.

    Add Sauce and Cheese

    Spread a thin layer of green enchilada sauce on the bottom of a baking dish. Place the rolled enchiladas seam-side down in the dish. Pour the remaining enchilada sauce over the top and sprinkle with shredded Monterey Jack cheese.

    Bake

    Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

    Serve

    Remove from the oven and let cool for a few minutes. Serve warm with sour cream on the side.
