    Prepare the Rice

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add the rice to the saucepan and stir to coat the grains with oil. Sauté for 2-3 minutes.

    Pour in the water and add salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and water is absorbed.

    Prepare the Beans

    If using canned black beans, drain and rinse them. If using dried beans, soak them overnight, then boil until tender.

    In a frying pan, heat a little olive oil over medium heat. Add the black beans, season with black pepper, and cook for about 5 minutes, stirring occasionally.

    When the rice is done, fluff it with a fork and mix in the chopped cilantro.
