1. Prepare the Pork Filling
In a large pot, combine the pork shoulder, chopped onion, minced garlic, cumin, chili powder, salt, black pepper, and water. Bring to a boil, then reduce heat to low and simmer for about 2 hours or until the pork is fork-tender. Remove the pork, shred it, and mix it with some of the cooking liquid to keep it moist.
2. Make the Tamale Dough
In a large mixing bowl, whisk together masa harina, baking powder, and salt. In another bowl, beat the vegetable shortening until fluffy. Gradually add the masa mixture and chicken broth, mixing until a soft dough forms.
3. Assemble the Tamales
Soak corn husks in warm water for about 30 minutes. Take a soaked husk, spread about 2 tablespoons of tamale dough on the wide end, add a tablespoon of the pork filling, then fold the sides over and roll it up tightly. Secure with a strip of corn husk.
4. Cook the Tamales
Place the tamales upright in a steamer pot, cover, and steam for about 1 to 1.5 hours, or until the dough is firm and pulls away from the husk.
5. Serve
Once cooked, let the tamales cool slightly before serving. Enjoy with salsa or your favorite toppings.
