    Prepare the Beef Filling

    In a skillet over medium heat, add olive oil. Once hot, add chopped onions and sauté until translucent. Add ground beef, cumin, salt, and black pepper. Cook until the beef is browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). In a separate pan, warm the corn tortillas slightly to make them pliable. Spread a couple of tablespoons of the beef mixture in the center of each tortilla, roll them up, and place them seam side down in a baking dish.

    Add Sauce and Cheese

    Pour the enchilada sauce evenly over the rolled tortillas, then sprinkle shredded cheddar cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and slightly golden.

    Garnish and Serve

    Remove from the oven and let cool slightly. Garnish with fresh cilantro before serving. Serve hot with additional enchilada sauce on the side if desired.
