    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant. Add ground beef, season with salt and pepper, and cook until browned and fully cooked. Drain excess fat and set aside.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of red enchilada sauce at the bottom. Take a corn tortilla, fill it with the ground beef mixture, roll it up, and place it seam side down in the dish. Repeat with red sauce for one third of the enchiladas and green sauce for another third.

    Add Sauce and Cheese

    Once all enchiladas are in the dish, pour remaining red and green enchilada sauces evenly over the top. Sprinkle shredded cheese generously over the enchiladas.

    Bake

    Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.

    Serve

    Remove from the oven, let cool slightly, and serve hot. Enjoy your Enchilada Plate with toppings of your choice, such as sour cream, guacamole, or sliced olives.
