    Prepare the Peppers

    Roast the poblano peppers over an open flame or under a broiler until charred on all sides. Place them in a plastic bag for about 10 minutes to steam, then peel off the skin and remove the seeds.

    Stuff the Peppers

    Carefully stuff the roasted peppers with cheese, making sure not to overfill them.

    Make the Batter

    In a bowl, beat the eggs and mix in the milk, flour, salt, and pepper until smooth.

    Fry the Rellenos

    Heat the vegetable oil in a large skillet over medium heat. Dip each stuffed pepper in the batter, then carefully place them in the hot oil. Fry until golden brown on both sides, about 3-4 minutes per side.

    Prepare the Sauce

    In a separate saucepan, sauté the diced onions and minced garlic until translucent. Add the tomato sauce and simmer for 10 minutes.
