    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Stir in cumin, salt, and pepper. Remove from heat and mix in 1 cup of shredded cheese.

    Prepare the Tortillas

    In a separate pan, warm the corn tortillas until pliable, about 30 seconds on each side.

    Assemble the Enchiladas

    Spread a little enchilada sauce on the bottom of a baking dish. Take a warm tortilla, add a portion of the cheese and onion mixture, roll it up, and place it seam side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the remaining shredded cheese on top.

    Bake

    Preheat the oven to 350°F (175°C) and bake the enchiladas for 20-25 minutes, until the cheese is melted and bubbly.

    Serve

    Remove from oven, let cool slightly, then serve with your choice of toppings such as sour cream, guacamole, or chopped cilantro.
