    Prepare the filling

    In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Add half of the shredded cheese and mix until melted. Remove from heat and set aside.

    Assemble the enchiladas

    Preheat oven to 350°F (175°C). Take a corn tortilla, fill it with the cheese mixture, and roll it up tightly. Place the rolled enchilada seam side down in a baking dish. Repeat until all tortillas are filled.

    Add enchilada sauce

    Pour the enchilada sauce evenly over the rolled enchiladas. Sprinkle the remaining shredded cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.

    Garnish and serve

    Remove from the oven, garnish with chopped cilantro, and serve hot.
