    Prepare the Filling

    In a skillet over medium heat, add olive oil. Once hot, add chopped onions and garlic, sautéing until translucent. Stir in cumin, salt, and pepper to taste.

    In a mixing bowl, combine the shredded cheddar and Monterey Jack cheeses. Reserve half for topping.

    Assemble the Enchiladas

    Warm the corn tortillas in a dry skillet for a few seconds on each side. Spread a spoonful of the onion mixture and a generous amount of the cheese mixture onto each tortilla, then roll them up tightly.

    Spread a thin layer of enchilada sauce on the bottom of a baking dish. Place the rolled enchiladas seam-side down in the dish.
