Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Cut the cauliflower into florets and place them in a large mixing bowl.

Season the Cauliflower
Add the Szechuan peppercorns, soy sauce, sesame oil, minced garlic, minced ginger, salt, and pepper to the bowl. Toss well to coat the cauliflower evenly.

Roast the Cauliflower
Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden and tender, flipping halfway through.

Cook the Chinese Sausage
While the cauliflower is roasting, heat a small skillet over medium heat. Add the diced Chinese sausage and cook until browned and crispy, about 5-7 minutes.

Combine and Serve
Once the cauliflower is done roasting, remove it from the oven and transfer it to a serving dish. Top with the cooked Chinese sausage, chopped roasted peanuts, chopped green onions, and red chili flakes. Serve warm.
