Cook the Noodles
Bring a pot of water to a boil. Add the flat rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking.

Prepare the Chicken
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken breast and stir-fry until cooked through, about 5-7 minutes.

Combine Ingredients
Add the diced tomatoes and sliced chili peppers to the skillet with the chicken. Stir and cook for an additional 2-3 minutes until the tomatoes soften.

Add Noodles and Basil
Add the cooked noodles to the skillet and toss everything together. Stir in the fresh basil leaves and cook for another minute to combine all flavors. Season with salt and pepper to taste.

Serve
Remove from heat and serve immediately, garnished with additional basil if desired.
