Preparation

    Prepare the Fries

    Peel and cut the Russet potatoes into fry shapes. Soak them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C). Drain the soaked potatoes and pat them dry. Fry them in batches until golden brown, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

    Cook the Bacon

    In a skillet, cook the Neuske's bacon over medium heat until crispy. Remove from the skillet and let drain on paper towels. Crumble into small pieces.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Add the milk and bring to a simmer. Gradually whisk in the cheddar cheese until melted and smooth. Season with salt and pepper to taste.

    Assemble the Cellar Fries

    Place the fried potatoes on a serving platter. Drizzle with the cheese sauce, then sprinkle with crumbled bacon and chopped scallions.
