Mousse Preparation

    Cook the Chicken Livers

    In a skillet, melt half of the butter and sauté the shallots and garlic until soft. Add the chicken livers, season with salt, pepper, and thyme, and cook until browned but still pink inside. Deglaze with cognac and cook for another 1-2 minutes. Remove from heat and let cool.

    Blend the Ingredients

    Once cooled, transfer the liver mixture to a food processor, add the remaining butter and heavy cream. Blend until smooth and creamy. Adjust seasoning as necessary.

    Chill the Mousse

    Spoon the mousse into serving dishes or ramekins, smooth the top, and refrigerate for at least 2 hours or until set.

Red Pepper Gelée Preparation

    Prepare the Gelatin

    Soak the gelatin sheets in cold water until softened. In a saucepan, combine the roasted red peppers, water, white wine vinegar, sugar, and salt. Bring to a boil, then blend until smooth.

    Set the Gelée

    Remove from heat, add the softened gelatin, and stir until dissolved. Pour into a flat dish and refrigerate until set.

    Make the Dough

    In a bowl, combine flour, yeast, and salt. Gradually add water and olive oil, mixing until a soft dough forms. Knead for about 10 minutes.

    Let it Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.

    Shape and Bake

    Preheat the oven to 220°C (428°F). Punch down the dough and spread it onto a greased baking tray. Dimple the surface, drizzle with olive oil, sprinkle rosemary, and bake for 20-25 minutes or until golden brown.
