Prepare the Honey
In a small saucepan, heat the honey over medium heat until it starts to bubble slightly. Continue cooking for about 3-4 minutes until it turns a deep amber color and has a slightly burnt aroma. Remove from heat and let it cool.
Toast the Sourdough
Toast the slices of sourdough bread until golden brown and crispy.
Assemble the Dish
Place the toasted sourdough on a serving plate. Tear the burrata cheese and place it on top of the toast. Drizzle the burnt honey over the burrata, and sprinkle with fried sage leaves. Season with salt and black pepper to taste.
