In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes. This will help tenderize the fish and add flavor.

In a separate bowl, mix together the cornmeal, flour, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

Remove the catfish fillets from the buttermilk and allow the excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well coated.

In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
