Marinate the Chicken
In a large bowl, combine fresh sage leaves, olive oil, minced garlic, salt, and black pepper. Add the chicken breasts and ensure they are well coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Grill the Chicken
Preheat the grill to medium-high heat. Remove the chicken from the marinade and shake off any excess. Grill the chicken breasts for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Prepare the Emulsion
In a mixing bowl, whisk together lemon juice and egg yolks until well combined. Slowly drizzle in olive oil while whisking continuously until the mixture becomes thick and creamy. Stir in the grated Pecorino Romano cheese. Season with salt and black pepper to taste.
Serving

Plate the Dish
Slice the grilled chicken breasts and arrange them on a serving platter. Drizzle the Lemon Pecorino Emulsion over the chicken just before serving. Serve with additional lemon wedges and garnish with extra sage leaves if desired.
