Preparation of Chicken

Season the Chicken
Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels. Season both sides of the chicken breasts with salt and black pepper.

Prepare the Crust
In a bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, dried basil, and paprika. Mix well until thoroughly combined.

Coat the Chicken
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for about 2-3 minutes on each side until golden brown. Remove from heat.

Apply the Crust
Evenly press the Parmesan breadcrumb mixture onto the top of each chicken breast, ensuring they are well coated.
Roasting the Tomato Jus

Prepare the Tomatoes
In a separate baking dish, toss together the cherry tomatoes, minced garlic, fresh basil, balsamic vinegar, salt, and olive oil.

Roast the Tomatoes
Place the baking dish in the oven alongside the chicken and roast for about 20-25 minutes, or until the tomatoes are blistered and soft.

Bake the Chicken
Once the chicken is coated, place the skillet in the oven and bake for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Blend the Jus
Once the tomatoes are roasted, remove them from the oven and blend the mixture until smooth. If desired, strain for a smoother sauce.

Plate the Parmesan crusted chicken breasts and drizzle with the roasted tomato jus. Garnish with additional fresh basil if desired.
