Prepare the Grouper

Coat the Grouper
Place the grouper fillets in the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes.
Make the Romesco Sauce

Blend Ingredients
In a food processor, combine roasted red peppers, toasted almonds, minced garlic, olive oil, red wine vinegar, smoked paprika, and salt. Blend until smooth.

Adjust Seasoning
Taste the sauce and adjust the seasoning if necessary, adding more salt to taste. Set aside.
Roast the Grouper

Preheat the Oven
Preheat your oven to 400°F (200°C).

Arrange the Fish
Place the marinated grouper fillets on a baking sheet lined with parchment paper.

Roast the Fish
Roast the grouper in the preheated oven for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
Serve

Plate the Dish
Remove the grouper from the oven and plate it. Spoon the romesco sauce over the top.

Garnish with additional chopped parsley if desired, and serve hot with your choice of sides.
