Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until the mixture resembles wet sand.

Press into Pan
Press the crust mixture firmly into the bottom of a greased 9x13 inch baking dish. Use the bottom of a glass to create an even layer. Bake in the preheated oven for 10 minutes until lightly golden. Remove from oven and let cool.

Make the Filling
In a mixing bowl, beat the softened cream cheese until smooth. Gradually add 0.75 cups of granulated sugar, mixing until well combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and heavy cream until the mixture is smooth.

Add Berries
Gently fold in the mixed berries into the cream mixture being careful not to break them apart.

Bake the Bars
Pour the filling over the cooled crust in the baking dish. Bake in the oven at 350°F (175°C) for 30-35 minutes or until the filling is set and the edges are lightly golden. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours until fully chilled.

Prepare the Topping
Once the bars are chilled, sprinkle 0.25 cups of granulated sugar evenly over the top of the bars.

Caramelize Sugar
Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust. If you don’t have a torch, you can place the bars under a broiler for a few minutes, watching closely to prevent burning.

Allow the caramelized sugar to cool for a few minutes. Garnish with fresh berries if desired, then cut into squares to serve.
