Salmon Marinade Instructions

    Prepare the Marinade

    In a bowl, whisk together olive oil, fresh lemon juice, fresh orange juice, minced garlic, chopped dill, salt, and black pepper until well combined.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure the salmon is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Tomato Jam Instructions

    Cook the Tomatoes

    In a large saucepan, combine the chopped tomatoes, finely chopped onion, sugar, apple cider vinegar, and salt. Cook over medium heat, stirring occasionally, until the mixture thickens (about 30-40 minutes).

    Add Basil

    Once the jam has thickened, remove it from heat and stir in the chopped fresh basil. Allow it to cool before serving.

Grilling Instructions

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

    Grill the Salmon

    Remove the salmon from the marinade and place it on the preheated grill. Cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Serve

    Remove the salmon from the grill and let it rest for a couple of minutes. Serve the grilled salmon with a generous spoonful of tomato jam on top.
