Method
For the Key Lime Tart
- 1
Prepare the crust
In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well mixed. Press the mixture into the bottom and up the sides of a 9-inch tart pan.
- 2
Bake the crust
Preheat your oven to 350°F (175°C). Place the tart crust in the oven and bake for about 8-10 minutes or until golden brown. Remove from the oven and let it cool.
- 3
Make the filling
In a mixing bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, and lime zest until smooth.
- 4
Bake the tart
Pour the filling into the cooled tart crust. Bake in the preheated oven for an additional 15-20 minutes until the filling is set. Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
For the Berries & Whipped Cream
- 5
Prepare the berries
Wash the mixed berries under cold water and pat them dry. Set aside.
- 6
Make the whipped cream
In a large mixing bowl, whip the heavy cream until it begins to thicken. Gradually add the powdered sugar and vanilla extract, and continue to whip until soft peaks form.
- 7
Serve
Slice the key lime tart and serve it topped with a dollop of whipped cream and a generous serving of mixed berries.
