Preparation of Salad Base

Wash and Chop Vegetables
Begin by washing the romaine lettuce thoroughly under cold water. Chop it into bite-sized pieces and place it in a large mixing bowl.

Prepare Cherry Tomatoes
Halve the cherry tomatoes and add them to the bowl with the romaine.

Chop Cucumber
Peel the cucumber if desired, then chop it into small cubes. Add to the salad bowl.

Dice Red Bell Pepper
Remove the seeds and stem from the red bell pepper, then dice it into small pieces and add to the bowl.

Grate Carrot
Peel the carrot and grate it using a box grater. Add the grated carrot to the mixing bowl.

Rinse Garbanzo Beans
Open the can of garbanzo beans, rinse them under cold water, and drain. Add to the salad bowl.

Add Smoked Mozzarella
Cube the smoked mozzarella cheese into small pieces and add them to the salad.
Making the Vinaigrette

In a separate small bowl, whisk together the olive oil, balsamic vinegar, fresh orange juice, honey, salt, and black pepper until well combined.

Taste the vinaigrette and adjust the seasoning if necessary. You can add more honey for sweetness or more vinegar for tang.
