Method
Preparation
- 1
- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.
- 3
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and slightly thickened.
- 4
- 5
Add Flour and Vanilla
Sift the all-purpose flour and add it to the chocolate mixture along with the vanilla extract and a pinch of salt. Gently fold until just combined.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.
Baking
- 7
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should be soft and slightly jiggly.
- 8
Cool Slightly
Remove the ramekins from the oven and let them cool for about 1 minute. Carefully run a knife around the edges to loosen the cakes.
- 9
Serve
Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately, optionally with vanilla ice cream or whipped cream.
