Braised Short Ribs

Prepare the Short Ribs
Season the short ribs generously with salt and black pepper on all sides.

Sear the Ribs
In a large Dutch oven, heat the olive oil over medium-high heat. Once hot, add the short ribs and sear them until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

Add Broth and Herbs
Return the short ribs to the pot and add the beef broth, thyme, and bay leaves. Bring the mixture to a simmer.

Braise the Ribs
Cover the pot and transfer it to a preheated oven at 300°F (150°C). Braise for 3 hours, or until the ribs are tender and falling off the bone.

Shred the Meat
Once done, remove the pot from the oven and let the ribs cool slightly. Remove the bones and shred the meat, discarding any excess fat.
Horseradish Cream Sauce

Mix the Ingredients
In a medium bowl, combine sour cream, prepared horseradish, Dijon mustard, lemon juice, salt, and black pepper. Mix until well combined.

Chill the Sauce
Cover the bowl and refrigerate the horseradish cream sauce for at least 30 minutes to allow the flavors to meld.
Assemble the Sliders

Prepare the Buns
Slice the slider buns in half and lightly toast them if desired.

Fill the Sliders
On the bottom half of each bun, place a portion of the shredded short ribs. Top with pickled jalapeños and a dollop of horseradish cream sauce.

Finish with Parsley
Sprinkle chopped fresh parsley on top and place the top half of the bun to close the slider.

Serve
Arrange the sliders on a platter and serve immediately, with extra horseradish cream sauce on the side.
