Blackberry Panna Cotta Bars

    Prepare Blackberry Mixture

    In a saucepan, combine blackberries, 1/4 cup of sugar, and water. Cook over medium heat until blackberries soften and release their juices, about 10 minutes. Strain through a fine mesh sieve to remove seeds, pressing with a spatula to extract juice. Set aside.

    Bloom Gelatin

    In a small bowl, sprinkle gelatin over 1/4 cup of cold water. Let it sit for 5-10 minutes until it blooms.

    Heat Cream

    In a separate saucepan, heat heavy cream, remaining sugar, vanilla extract, and salt over medium heat until hot but not boiling. Stir in bloomed gelatin until dissolved.

    Combine and Set

    Remove the cream mixture from heat and stir in the blackberry juice. Pour the mixture into a greased 9x9 inch baking dish and refrigerate for at least 4 hours until set.

    In a bowl, mix graham cracker crumbs and melted butter together. Press into the bottom of the baking dish with the set panna cotta. Refrigerate until firm.

    Chop dark chocolate and place it in a heatproof bowl. Melt it over a double boiler or in the microwave in 30-second intervals until smooth. Let it cool slightly.

    Separate the egg whites and yolks into two different bowls.
