Crust Preparation

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are well coated with butter. Press the mixture firmly into the bottom of an 8x8-inch (20x20 cm) baking pan to form an even layer.

    Bake the Crust

    Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and set aside to cool.

Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder with cold water. Let it sit for about 5-10 minutes until it becomes spongy.

    Heat the Cream Mixture

    In a saucepan over medium heat, combine heavy cream and granulated sugar. Stir occasionally until the sugar has dissolved and the mixture is steaming, but do not let it boil.

    Add Gelatin and Vanilla

    Remove the saucepan from heat. Stir in the bloomed gelatin until fully dissolved, followed by the vanilla extract. Mix well.

    Add Blackberry Puree

    Stir in the blackberry puree until well combined and smooth.

    Pour the panna cotta mixture over the cooled crust in the baking pan. Spread evenly with a spatula.

    Refrigerate the panna cotta bars for at least 4 hours, or until fully set.

Serving Preparation

    Once set, remove the panna cotta bars from the refrigerator. Cut them into squares or rectangles.
