Beef Tenderloin Skewers

Method

Preparing the Beef Skewers

    Prepare the Beef

    Cut the beef tenderloin into 1-inch cubes. This will allow for even cooking on the skewers.

    Marinate the Beef

    In a bowl, combine the olive oil, minced garlic (from 2 cloves), salt, and black pepper. Add the beef cubes to the marinade and toss to coat. Let it marinate for at least 30 minutes.

    Assemble the Skewers

    After marinating, thread 4-5 beef cubes onto each skewer. Ensure the pieces are packed closely but not too tight to allow even cooking.

Making the Tarragon Aioli

    Prepare the Aioli

    In a mixing bowl, combine the mayonnaise, chopped fresh tarragon leaves, minced garlic (from 1 clove), lemon juice, salt, and black pepper. Mix well until smooth.

    Chill the Aioli

    Cover the aioli and refrigerate for at least 15 minutes to allow the flavors to meld.

Cooking the Skewers

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.
