Beef Preparation

Season the Beef
Sprinkle the beef tenderloin with salt and black pepper, ensuring it is evenly coated on all sides.

Cook the Beef
Reduce the heat to medium-low and cook the beef tenderloin to your desired doneness, about 10-15 minutes for medium-rare. Use a meat thermometer to check the internal temperature (135°F).

Rest the Beef
Once cooked, remove the beef from the skillet and let it rest for at least 10 minutes before slicing.
Red Pepper Relish Preparation

Combine Ingredients
In a bowl, combine roasted red peppers, minced garlic, red wine vinegar, olive oil, salt, and black pepper.

Stir the mixture until all ingredients are well incorporated. Adjust seasoning to taste.
Assembly

Slice the Beef
Thinly slice the rested beef tenderloin against the grain.

Slice the brioche buns in half and lightly toast them if desired.

On the bottom half of each bun, place a slice of beef, a handful of arugula, and a generous spoonful of red pepper relish. Top with the other half of the bun.
