    Prepare the Filling

    In a bowl, mix the crabmeat, shrimp, cream cheese, green onions, garlic, lemon juice, salt, and pepper until well combined.

    Stuff the Sole

    Lay the sole fillets flat on a clean surface. Spoon a portion of the crab and shrimp mixture onto each fillet, then carefully roll them up and secure with toothpicks if necessary.

    Cook the Sole

    Heat a skillet over medium heat and add a tablespoon of butter. Once melted, place the stuffed sole in the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through.

    Make the Lemon Butter Sauce

    In a small saucepan, melt 4 tablespoons of butter over low heat. Add lemon juice and season with salt and pepper to taste. Stir until combined.

    Prepare Garlic Mashed Potatoes

    Boil 2 pounds of peeled potatoes until tender. Drain and mash with 4 tablespoons of butter, 2 cloves minced garlic, and 1/2 cup of milk. Season with salt and pepper.

    Place a generous scoop of garlic mashed potatoes on each plate. Top with the stuffed sole and drizzle with lemon butter sauce.
