Marinate the Chicken
In a bowl, combine the chicken breasts with olive oil, minced garlic, salt, and black pepper. Let it marinate for at least 30 minutes.
Prepare the Vegetables
Chop the onion and slice the cherry peppers. Set aside.
Cook the Chorizo
In a large skillet over medium heat, add the jalapeno infused chorizo slices. Cook until browned, about 3-4 minutes. Remove from the skillet and set aside.
Sauté the Chicken
In the same skillet, add the marinated chicken breasts. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
Make the Sauce
In the same skillet, add more olive oil if needed, and sauté the onions until translucent. Add the cherry peppers and cook for another 2 minutes. Then, add the chopped fresh tomatoes and white wine. Stir and let it simmer for about 5 minutes.
Combine Everything
Return the cooked chicken and chorizo to the skillet. Stir to coat everything in the sauce and let it simmer for an additional 5 minutes.
Serve
Garnish with fresh cilantro and serve hot.
