Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
Stir in diced tomatoes, black olives, salt, pepper, and cumin. Cook for an additional 5 minutes until heated through. Remove from heat and let cool slightly.
Assemble the Empanadillas
Preheat oven to 375°F (190°C). Roll out empanadilla dough on a floured surface. Cut into circles (about 4-5 inches in diameter).
Place a spoonful of the filling in the center of each circle. Top with a sprinkle of mozzarella cheese.
Fold the dough over to form a half-moon shape, sealing the edges by pressing with a fork.
Bake the Empanadillas
Place the assembled empanadillas on a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden brown.
Remove from the oven and let cool slightly before serving.
