Preheat your oven to 425°F (220°C). Toss the diced potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes, or until golden brown and crispy, tossing halfway through.

Prepare the Potatoes

While the potatoes are roasting, heat a grill or grill pan over medium-high heat. Brush the cleaned squid with the remaining 2 tablespoons of olive oil and season with salt and pepper. Grill the squid for about 2-3 minutes on each side, until they are opaque and have grill marks.

Grill the Squid

In a small bowl, mix the minced garlic and chopped parsley with a drizzle of olive oil. Set aside.

Prepare the Garlic and Parsley Drizzle

Once the potatoes are roasted and the squid is grilled, arrange the potatoes on a serving plate and top with the grilled squid. Drizzle the garlic and parsley mixture over the squid and serve immediately.
